High-Protein Chicken Pesto Pasta

Ingredients:

200g whole grain or high-protein pasta

250g grilled chicken breast, sliced

2 tbsp green pesto (store-bought or homemade)

1 cup baby spinach

1/2 cup cherry tomatoes, halved

1 tbsp olive oil

Salt & pepper

Optional: grated parmesan (or nutritional yeast)

Instructions:

  1. Boil pasta according to package instructions. Drain and set aside.
     
  2. In a pan, heat olive oil. Add grilled chicken and fry through if not pre-fried.
     
  3. Add cherry tomatoes and spinach, stir until spinach wilts.
     
  4. Add pasta and pesto, toss until well mixed.
     
  5. Season with salt and pepper. Serve hot with parmesan on top if desired.
